Summer. And eating.

Howdy, y’all. It’s a beautiful morning in Texas…from indoors, that is. Today’s forecast is sunny with a high of 93, and humidity levels so high that stepping outside feels like getting in a jacuzzi. Because getting in a jacuzzi in business casual attire is a bad idea, staying inside is my best option. Texas summers are a slow, sweaty death, and this one has only just begun. Yep, I’ll be inside for the next four months.

On the plus side, summer is the best, best, BEST season for produce! Strawberries, raspberries, blackberries, blueberries (I’m crazy over berries of any variety), mangoes, cherries, pineapple, and NECTARINES. And there you have a clean, consolidated list of my favorite foods in the whole wide world, which all, strangely, happen to be fruits. OH – I forgot avocado…also a fruit. 🙂 What is your favorite season for produce?

Just for kicks and a fun way to end today’s post, I’ve compiled a visual list of a look into my belly over the last week. Photos are all taken on an amazing camera – my iPhone. Maybe someday I’ll have a schnazzy little Canon and take incredibly creative and artistic shots of perfectly presented meals worthy of a professional blogger. That’s the dream. Til then, I’ve got an iPhone.

Giant lunch at the office: whole wheat biscuit (Elesha's recipe), gluten, black beans, sweet potato, strawberry spinach salad, and pineapple.

Delicious Sunday brunch of gluten, mango, strawberries, pineapple, cereal, and coffee.

Raw tofu with olive oil, salt, pepper, fresh basil, and tomatoes. Tofu bruschetta, if you will...only it tasted nothing like bruschetta.

Simple supper: Pinto beans with veggie shreds (vegan cheese), chopped gluten, and a healthy helping of homemade guacamole.

Tofu sandwich on Ezekiel Bread...an easy option for work.

Tofu omelette with spinach, mushrooms, and onions from that book I mentioned, "Vegan Brunch". This little beauty took me about 45 minutes to create. This was attempt number three. Tasty!

Elesha is coming over tomorrow to see my new place. I’m excited to show her around, catch up, and she promised to come bearing treats, which is always something to look forward to! We may even collaborate in the kitchen unless we get too carried away being chatty and drinking coffee (the likely scenario).
