Meet the Girls

Becky

I’ve got a flaming passion for healthy food and an embarrassingly big appetite. Eating is my #1 hobby. Obviously, I love cooking and baking and spend almost all of my free time in the kitchen. I have a major sweet tooth and would be perfectly content eating just dessert for the rest of my life. I have been known to over-indulge on fruit…most days of the week. Because of my passion for health and nutrition, I plan to pursue a career in that area and help others lead full and happy lives.

My ultimate goal in life is to raise the healthiest family I possibly can. For me, this will be accomplished by owning a small farm, growing all of our own organic food, and spending the majority of the day outdoors. Until then, I’ll continue to spend the bulk of my time in the kitchen, with my incredible husband, or watching health documentaries. I’m the proud owner of a positive attitude and try to enjoy every beautiful day to the fullest. The result is a very happy me!

I am a foodie, I admit it.  When I am planning my weekend fun or a great vacation, food tends to be frontrunner in my plans.  I love spending time in the kitchen creating recipes upon recipes.  I love to travel to new places and, yes, try the amazing food.   Indian, Greek, Italian, Mexican, Caribbean, I don’t discriminate.  In fact, I will probably do my darndest to imitate it in my own kitchen, though not always successfully.

In December 2011, I graduated with my Bachelors of Business Administration.  I have been working as a paralegal for the last five years.  I have big plans and dreams for my life.   Maintaining my health is a big part of those plans, since I have to live a long time in order to achieve them all.

I am married to the greatest husband in the world.  We have been together for over five years and it still amazes me how easy it is to be with him.  I am taking him with me on my health journey because I intend for him to live a long time too.

When I’m not working, cooking, or hanging out with my hubby, you will probably find me running, doing yoga, kickboxing, lifting weights, reading, or writing out my business/life plan (consequence of my Type A personality).

I am thankful every day for the life I’ve been given.  I have no reason in the world to complain – I have my health, I have an education, I have wonderful friends and family – and I hope that I am able to use all the blessings in my life to benefit others.

  1. Hi becky, I just have to say I’m super excited for you and your blog. It’s inspiring. I’ve realized that although I’m super skinny and could even stand to gain a few pounds, that I’m sooooo unhealthy. Esp for someone who thinks she’s not. You inspire me to be healthier. 🙂

    This is a super inspirational site, Becky. I have recently started on a vegan fast and its really wonderful. A bit imbalanced, but this site really encourages me to try to work harder on creative ways of eating healthy. Otherwise I become a salad addict.

    Also, super cool about the marathons. I too like to run and feel it has benefited my mood levels. I’m so happy for you and feel really lucky I came across this. God Bless you 🙂

      We’re happy you found us too, Kimmy! Congrats on your own journey to health and fitness. Don’t worry about being perfect, I’m sure Becky would agree that neither of us are perfect. It’s certainly a process of really becoming intuned to your body’s needs. I’ve never heard of too much salad hurting anyone. Toss some beans and tofu in for protein and fiber! Yum!

      Kimmy, I’m so happy you have been reading our blog! Especially because I read yours every time you post it to facebook. I enjoy it so much and it makes me yearn to travel. You always have such nifty photos.

      Glad to hear about your vegan fast. Veganness IS wonderful, but I’m not super strict about it anymore. I would say 95% of my diet is vegan but I make exceptions on occasion. Most dairy products are so unnecessary anyway! Oh, and nothing wrong with being a salad addict, as I certainly am one. I have salad withdrawals if I go more than 24 hours without greens. Hehe.

      Keep on runnin’ Kimbas! Maybe someday we’ll hop out our front doors, run and run, and meet up somewhere in the middle…Kentucky, maybe? Missouri? Love you, Kimmers.

    Tabi showed me this blog 5 days ago, and I’ve been on it everyday since! I love it! I have the beany blondies in the oven right now, and my house now smells amazing!! I can’t wait to try them, the batter was awesome, so thats encouraging.       Thanks, Nicole! So glad Tabi showed you our blog! It’s very encouraging to hear that you enjoy it and read it regularly, we honestly appreciate that. And yes, we do try to keep recipes fairly simple for the most part. I think people are less likely to try out difficult recipes, and the last thing we want is to make healthy food an inconvenience! Oh, and so glad you like the pics; I drool over the gorgeous photography on other food blogs and feel so limited by not having a nice camera, but I do what I can with my iPhone. Maybe someday…
